Do y'all know what is good about these brownies? Just. about. every-DANG-thing.
First and foremost they use an alcoholic accompaniment of some type which is perfect not only for the end result but the baker as well. Next, we gots an excuse to indulge–damp, cold weather. What does this mean?
Dark chocolate.
While I didn’t have access to this deliciously wonderful and consistently great quality chocolate, it is always best to go with the best stuff you can find.

The most important reason to love this brownie? You know besides its earthy, dark, handsome, richness–they are gooey. That’s right. GOO-EY. Put that in your face over an unexpectedly cool and decidedly sleepy weekend. Or perhaps make them on a Monday. When the Monday requires both a beer and brownie.
Gingered Guinness Brownies
(slightly adapted fromJamie Magazine)
Yield: 1–9x9 baking pan of awesome
Prep: 20 mins
Preheat your oven to 350.
Over medium high heat melt 1 ¾ sticks of unsalted butter along with 7 oz of chocolate chips. It’s pretty quick. Stir constantly. 3 minutes. Done. Set aside.
Chop 4 oz crystalized ginger and 2 oz fresh ginger. reserve.
Chop 6 oz shelled pecans. Reserve.
Now take 3 large eggs at room temperature and beat with mixture for about 90 seconds. Add 7 oz Guinness extra stout. Whisk egg mixture and melted chocolate together.
Next, in a large mixing bowl combine 1 cup white cane sugar, ¾ cups sifted AP flour, 1/3 cup sifted dark cocoa powder, 1 tsp allspice, 1 tsp cinnamon, 1 tsp nutmeg, and 1 tsp baking powder.
Now. Now you can combine your ingredients. Combine you Guinness-egg mixture with the flour mix and once that is well combined add your ginger.
Fold in 3 oz of chocolate chips.
Pour batter into 9x9 pan.
Sprinkle with chopped pecans and 2 TBSP sea salt.
Bake at 350 for 20 mins. Remove from oven and allow to cool for 3 to 5 minutes.
That’s–that’s dark and handsome right there.
